Dark Chocolate Strawberry Jam
Ingredients:
4 cups fresh strawberries, hulled and chopped
2 cups granulated sugar
1 tablespoon lemon juice
4 oz dark chocolate (70% cocoa or higher), finely chopped
1 packet (1.75 oz) fruit pectin (or use pectin per packet instructions)
Directions:
In a large saucepan, combine strawberries, sugar, and lemon juice. Cook over medium heat, stirring often, until the mixture begins to boil and strawberries break down (about 10 minutes).
Use a potato masher or fork to lightly mash the fruit to your desired texture.
Stir in the fruit pectin and bring the mixture to a rolling boil. Boil hard for 1–2 minutes while stirring constantly.
Remove from heat and stir in chopped dark chocolate. Mix until fully melted and incorporated.
Carefully pour the hot jam into sterilized jars, leaving 1/4-inch headspace. Wipe the rims clean, seal with lids, and let cool at room temperature.
Store in the refrigerator for up to 3 weeks or process in a hot water bath for 10 minutes for longer shelf life.
