🇮🇹 Pasta al Forno con Melanzane (Baked Pasta with Eggplant)
Golden, bubbling baked pasta with roasted eggplant and cheese—Italian comfort food at its best.
Ingredients:
• 12 oz penne pasta
• 2 large eggplants, sliced and roasted
• 1.5 cups tomato sauce
• 1 cup mozzarella, shredded
• 1/4 cup grated Parmesan
• Olive oil, salt, pepper, fresh parsley
Instructions:
1. 🍆 Roast eggplant slices in olive oil at 200°C (400°F) until golden.
2. 🍝 Boil penne until al dente and mix with sauce and eggplant.
3. 🧀 Layer into baking dish with mozzarella and Parmesan.
4. 🔥 Bake at 180°C (350°F) for 30 min. Garnish with parsley!
