Roasted Red Pepper Shrimp with Penne
Creamy Roasted Red Pepper Shrimp Penne Delight
Ingredients:
12 oz penne pasta
1 lb shrimp, peeled and deveined
2 large roasted red peppers, chopped
2 tablespoons olive oil
3 cloves garlic, minced
1/2 cup vegetable broth
1/2 cup coconut cream (or heavy cream if preferred)
1/4 cup Parmesan cheese (optional)
1 teaspoon smoked paprika
1/2 teaspoon crushed red pepper flakes (optional)
1/4 cup fresh basil leaves, chopped
Salt and black pepper to taste
Directions:
Cook the penne pasta according to package directions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
Add the shrimp to the skillet. Season with salt, pepper, and smoked paprika. Cook for about 2-3 minutes per side, or until shrimp are pink and cooked through. Remove shrimp and set aside.
In the same skillet, add the roasted red peppers and vegetable broth. Simmer for 2-3 minutes.
Transfer the red pepper mixture to a blender, add coconut cream, and blend until smooth.
Return the sauce to the skillet over low heat. Stir in the cooked pasta and shrimp. Toss until well coated.
Sprinkle with Parmesan cheese if using, and mix in chopped basil just before serving.
Garnish with extra basil leaves and crushed red pepper flakes for an added kick. Serve immediately!
