🍯🌿 Glazed Garlic Herb Salmon with Roasted Potatoes & Asparagus

🛒 Ingredients:

For the salmon:

2 salmon fillets (about 150g each)

2 tbsp olive oil

2 garlic cloves, minced 🧄

2 tbsp honey 🍯

Juice of 1/2 lemon 🍋

1 tbsp chopped parsley

Salt & black pepper

For the vegetables:

300g baby potatoes

200g asparagus

2 tbsp olive oil

Salt, pepper, and herbs to taste

👩‍🍳 Instructions:

Preheat oven to 200°C (390°F). Toss the baby potatoes with olive oil, salt, pepper, and herbs, and roast for 15 minutes. Add asparagus to the same tray, season and drizzle with olive oil, then roast everything for another 10 minutes. Meanwhile, mix olive oil, garlic, honey, lemon juice, parsley, salt, and pepper. Sear salmon in a pan for 2-3 minutes per side, then brush with the glaze and bake in the oven for 5 more minutes. Serve with roasted potatoes and asparagus.
