This falafel and roasted red pepper hummus bowl with cucumber, tomato salad tossed in olive oil, red wine vinegar, chunky feta, kalamata olives, pepperoncini, red onion and fresh chopped parsley over a bed of mixed greens and a squeeze of lemon. Both the falafel and red pepper hummus are store bought from Whole Foods. It was a nourishing and wholesome meal.
