Ingredients:
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
1 cup chopped pecans (preferably Alabama-grown)
½ cup brown sugar (packed)
½ cup chopped pecans (for topping)
2 tablespoons butter (for greasing the pan)
Instructions:
1. Preheat your oven to 350°F (175°C). Use 2 tablespoons of butter to grease a 9x5-inch loaf pan and set it aside.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set this mixture aside.
3. In a large bowl, use an electric mixer to cream together the softened butter and granulated sugar until the mixture is light and fluffy, which should take about 2-3 minutes.
4. Add the eggs one at a time, mixing thoroughly after each addition. Then, stir in the vanilla extract.
5. Gradually incorporate the dry ingredients into the butter mixture, alternating with the buttermilk. Start and end with the dry ingredients, mixing just until everything is combined.
6. Gently fold in the chopped pecans so they are evenly distributed through the batter.
7. Pour the batter into your prepared loaf pan and spread it out evenly.
8. Sprinkle the packed brown sugar and the additional chopped pecans evenly over the top.
9. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, loosely cover it with aluminum foil and continue baking.
10. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
