Ingredients:
4 salmon fillets (skinless)
2 tbsp olive oil
Salt and pepper to taste
3 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup chicken broth
1 tsp Italian seasoning
1/4 cup sun-dried tomatoes, chopped
2 cups fresh spinach
Fresh parsley, chopped (for garnish)
Instructions:
Season and Sear the Salmon: Season the salmon fillets with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the salmon fillets, flesh side down, and sear for 3-4 minutes on each side until golden brown and cooked through. Remove the salmon from the skillet and set aside.
Prepare the Sauce: In the same skillet, add the minced garlic and sauté until fragrant, about 1 minute. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
Make the Cream Sauce: Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Continue to stir until the cheese is melted and the sauce is smooth. Add Italian seasoning and chopped sun-dried tomatoes.
Add the Spinach: Stir in the fresh spinach and cook until wilted, about 2 minutes.
Combine and Serve: Return the seared salmon fillets to the skillet, nestling them into the sauce. Spoon some sauce over the top of the salmon. Simmer for an additional 2-3 minutes to heat through.
Garnish and Enjoy: Garnish with chopped fresh parsley and serve immediately.
