πͺ Easter Jello Cookies πͺ
Ingredients
1 box (3 oz) of your favorite flavored gelatin (e.g., strawberry, raspberry, or lemon)
1 cup unsalted butter, softened to room temperature
1 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
1 Β½ cups all-purpose flour
1 teaspoon baking powder
ΒΌ teaspoon fine sea salt
Optional: Colored sprinkles or coarse sugar for decoration
Instructions
Prepare Your Workspace: Preheat your oven to 350Β°F (175Β°C). Line two baking sheets with parchment paper or silicone mats to prevent sticking.
Cream Butter and Sugar: In a large mixing bowl, use a hand mixer or stand mixer to beat the softened butter and sugar together until light and fluffy. This should take about 2-3 minutes on medium speed.
Add Eggs and Flavoring: Crack the eggs into the bowl one at a time, mixing well after each addition. Stir in the vanilla extract for an extra layer of flavor.
Combine Dry Ingredients: In a separate bowl, whisk together the flour, gelatin powder, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing on low speed until just combined. Avoid overmixing to keep the cookies tender.
Shape the Dough: Scoop out tablespoon-sized portions of dough and roll them into balls. If desired, roll the balls in colored sprinkles or coarse sugar for a festive touch. Place them on the prepared baking sheets, spacing them about 2 inches apart.
Bake to Perfection: Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but theyβll firm up as they cool.
Cool and Serve: Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. Enjoy these fruity treats with a glass of milk or your favorite beverage!
