Avocado Egg Power Salad 🥑🥚🌽
Ingredients:
🥑 Avocado (sliced or mashed)
🥚 Boiled eggs (halved)
🌽 Sweet corn
🍅 Cherry or grape tomatoes
🧅 Red onion (sliced)
🧀 Crumbled feta cheese
🌿 Fresh parsley or cilantro
🌶️ Paprika or chili powder (optional)
🧂 Salt & pepper
🍋 Lemon juice or olive oil
Instructions:
Arrange all veggies, eggs & avocado in a bowl.
Sprinkle with feta, herbs, salt, pepper & paprika.
Drizzle with lemon juice or olive oil.
