Directions:
1. Preheat the oven to 180°C.
2. Slice the aubergine into rounds and lightly fry in olive oil until golden.
3. In a pan, heat passata with a dash of harissa, sugar, and red wine vinegar. Simmer for 10 minutes.
4. Layer aubergine slices in a baking dish and top with the passata mixture.
5. Slice the halloumi and layer over the aubergine.
6. Sprinkle parmesan on top and bake for 20 minutes or until golden.
7. Garnish with fresh parsley and serve hot.
