๐ฎ๐ง Steak Taquitos with Homemade Cheese Sauce, Pico & Guac ๐ฅ๐ฅ
These crispy steak taquitos are packed with flavor and layered with cheesy goodness, fresh pico, and cool guac. Perfect for game day, Taco Tuesday, or when you wanna flex your flavor game. Letโs roll! ๐
๐ Ingredients
For the Taquitos:
1 lb flank steak or skirt steak (thinly sliced or chopped)
ยฝ onion, finely chopped
1 tbsp olive oil
1ยฝ tsp chili powder
1 tsp cumin
1 tsp garlic powder
Salt & pepper to taste
10โ12 corn tortillas (or flour, if preferred)
Oil for frying
For the Cheese Sauce:
2 tbsp butter
2 tbsp flour
1ยฝ cups milk
2 cups shredded cheddar or Mexican blend cheese
ยผ tsp garlic powder
Salt to taste
For the Pico de Gallo:
2 Roma tomatoes, diced
ยผ red onion, finely chopped
1 jalapeรฑo, seeded and diced
ยผ cup chopped cilantro
Juice of ยฝ lime
Salt to taste
For the Guacamole:
2 ripe avocados
ยผ red onion, finely chopped
Juice of 1 lime
1 small clove garlic, minced
Salt & pepper to taste
๐ฅ Instructions
1. Make the Steak Filling:
In a skillet, heat olive oil over medium-high heat. Add chopped steak and onions.
Season with chili powder, cumin, garlic powder, salt & pepper. Cook until steak is browned and tender. Set aside.
2. Roll the Taquitos:
Warm tortillas slightly (so they roll easier). Add a spoonful of steak filling to each one and roll tightly.
Secure with a toothpick if needed.
3. Fry to Perfection:
Heat oil in a skillet over medium heat. Fry taquitos seam-side down until golden brown and crispy. Drain on paper towels.
4. Make the Cheese Sauce:
In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
Slowly whisk in milk and cook until slightly thickened. Stir in cheese, garlic powder, and salt. Cook until melted and smooth.
5. Make the Pico & Guac:
For pico, combine all ingredients in a bowl and mix well.
For guac, mash avocados and mix in onion, lime juice, garlic, salt & pepper.
6. Assemble & Serve:
Stack those crispy taquitos high, drizzle generously with cheese sauce, spoon over pico, and serve with a side of guac and lime wedges. ๐ถ๏ธ๐ฅ
