Honey Garlic Salmon with Roasted Broccoli Pasta
Sweet & Savory Glazed Salmon over Roasted Broccoli Fettuccine
Ingredients:
4 salmon fillets (6 oz each), skin-on
1/4 cup honey
3 tablespoons soy sauce (low-sodium)
6 cloves garlic, minced (divided)
1 tablespoon ginger, grated
1 tablespoon olive oil
1 teaspoon sesame oil
1 large head broccoli, cut into florets
8 oz fettuccine pasta (or pasta of choice)
2 tablespoons olive oil
1/2 teaspoon red pepper flakes (optional)
2 tablespoons lemon juice
Salt and pepper to taste
Green onions, sliced for garnish
Sesame seeds for garnish
Directions:
Preheat oven to 425°F (220°C).
In a small bowl, mix honey, soy sauce, half the minced garlic, ginger, and sesame oil.
Place salmon fillets on a lined baking sheet, skin-side down. Brush generously with half the honey garlic sauce. Set aside the remaining sauce.
On another baking sheet, toss broccoli florets with 1 tablespoon olive oil, salt, and pepper.
Place both baking sheets in the oven. Roast broccoli for 20 minutes, turning halfway. Roast salmon for 12-15 minutes until it flakes easily with a fork.
Meanwhile, cook pasta according to package instructions. Drain, reserving 1/4 cup of pasta water.
In a large pan, heat 2 tablespoons olive oil over medium heat. Add remaining garlic and red pepper flakes, cooking for 30 seconds until fragrant.
Add cooked pasta, roasted broccoli, and lemon juice to the pan. Toss to combine. Add reserved pasta water if needed for creaminess.
Serve pasta topped with salmon fillets. Drizzle with remaining honey garlic sauce.
Garnish with sliced green onions and sesame seeds.
