Cilantro Lime Shrimp & Avocado Bowl

Ingredients:

1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 ripe avocado, diced
1 cup cooked quinoa
1/2 cup cherry tomatoes, halved
1/2 cup black beans, rinsed and drained
1/4 cup red onion, finely chopped
1/4 cup chopped cilantro
2 limes, juiced

Instructions:

1. In a medium bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and pepper. Add shrimp and toss to coat evenly.
2. Heat a large skillet over medium-high heat. Add shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. Remove from heat and set aside.
3. In a large bowl, combine cooked quinoa, diced avocado, halved cherry tomatoes, black beans, red onion, and chopped cilantro.
4. Add the cooked shrimp to the bowl with the quinoa and vegetables.
5. Drizzle the juice of 2 limes over the shrimp and vegetable mixture.
6. Gently toss everything together to combine.
7. Serve immediately and enjoy!
