Tiramisu Cupcakes ☕🍰✨
(Makes about 12 cupcakes)
Ingredients:
For the Cupcakes:
1 ¼ cups all-purpose flour
1 ½ tsp baking powder
¼ tsp salt
½ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup whole milk
For the Coffee Soak:
½ cup strong brewed coffee or espresso, cooled
2 tbsp coffee liqueur (optional)
2 tbsp sugar
For the Mascarpone Frosting:
½ cup heavy whipping cream
½ cup mascarpone cheese, softened
½ cup powdered sugar
1 tsp vanilla extract
For Garnish:
Unsweetened cocoa powder for dusting
Chocolate shavings (optional)
Instructions:
Step 1: Make the Cupcakes
Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
In a bowl, whisk together flour, baking powder, and salt.
In a separate large bowl, beat butter and sugar until light and fluffy.
Add eggs one at a time, mixing well. Stir in vanilla.
Gradually add the dry ingredients, alternating with milk, mixing until just combined.
Divide batter evenly into cupcake liners, filling each about ¾ full.
Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
Step 2: Prepare the Coffee Soak
Mix the brewed coffee, coffee liqueur (if using), and sugar.
Using a fork or toothpick, poke small holes into each cupcake.
Brush or spoon the coffee mixture over each cupcake, allowing it to soak in.
Step 3: Make the Mascarpone Frosting
Beat heavy cream until soft peaks form.
In another bowl, mix mascarpone, powdered sugar, and vanilla until smooth.
Gently fold in whipped cream until combined.
Step 4: Assemble
Pipe or spread mascarpone frosting over each cupcake.
Dust with cocoa powder and add chocolate shavings if desired.
