Garlic Chicken with Roasted Potatoes & Fresh Salad
Ingredients:
For the Garlic Chicken:
2 boneless, skinless chicken breasts
3 garlic cloves, minced
2 tbsp olive oil
1 tbsp lemon juice
1 tsp dried oregano
½ tsp salt
¼ tsp black pepper
For the Roasted Potatoes:
3 medium potatoes, cut into wedges
1 tbsp olive oil
½ tsp garlic powder
½ tsp paprika
½ tsp salt
¼ tsp black pepper
For the Fresh Salad:
2 cups mixed greens
½ cup cherry tomatoes, halved
¼ cup cucumber, sliced
¼ cup red onion, thinly sliced
2 tbsp feta cheese, crumbled
2 tbsp balsamic vinaigrette
Directions:
Prepare the Chicken: In a bowl, mix olive oil, garlic, lemon juice, oregano, salt, and black pepper. Coat chicken breasts in the marinade and let sit for 10 minutes.
Cook the Chicken: Heat a skillet over medium heat. Cook chicken for 6-7 minutes per side until golden brown and cooked through. Let rest before slicing.
Roast the Potatoes: Preheat oven to 400°F (200°C). Toss potato wedges with olive oil, garlic powder, paprika, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes, flipping halfway.
Assemble the Salad: In a large bowl, toss mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese. Drizzle with balsamic vinaigrette.
