Lemon Chicken & Veggie Orzo Stir Fry
A zesty, colorful one-pan meal that’s bursting with flavor and ready in no time!
Ingredients:
1 cup orzo
1 lb diced chicken breast
1 zucchini, chopped
1 red bell pepper, chopped
1 cup broccoli florets
2 tbsp lemon juice
1 tsp lemon zest
2 tbsp olive oil
¼ cup grated Parmesan
1 tsp garlic powder
½ tsp salt
¼ tsp black pepper
½ tsp dried oregano
¼ tsp red pepper flakes (optional)
Fresh parsley (for garnish)
Instructions:
Cook orzo, then drain and set aside.
Heat 1 tbsp oil in a skillet. Cook chicken with garlic powder, salt, and pepper until browned. Remove.
Add remaining oil. Sauté zucchini, bell pepper, and broccoli for 3–4 minutes.
Add chicken and orzo back in. Stir in lemon juice, zest, oregano, and pepper flakes. Cook 2 more minutes.
Sprinkle with Parmesan and parsley. Serve warm.
