Flavorful Pan-Fried Chickpea Veggie Fritters Recipe ✨💚

Ingredients:
1 can (15 oz / 425g) chickpeas, rinsed and drained
1 cup mixed finely chopped vegetables (e.g., bell pepper, zucchini, corn, spinach)
1/2 cup finely chopped onion
2 cloves garlic, minced
1/2 cup (2 oz / 55g) chickpea flour (besan)
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon turmeric powder
Pinch of cayenne pepper (optional)
1/4 cup chopped fresh cilantro or parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
Olive oil or avocado oil for pan-frying

Directions:
1. In a large bowl, roughly mash the rinsed and drained chickpeas with a fork or potato masher. Leave some texture.
2. Add the finely chopped mixed vegetables, chopped onion, and minced garlic to the mashed chickpeas.
3. Stir in the chickpea flour, ground cumin, coriander, turmeric, optional cayenne pepper, chopped cilantro/parsley, salt, and black pepper. Mix well until a thick batter forms. If it seems too dry, add 1-2 tablespoons of water.
4. Heat about 1/4 inch (6mm) of oil in a large skillet over medium heat.
5. Once the oil is hot (a drop of batter should sizzle), carefully drop rounded tablespoons of the fritter mixture into the skillet. Gently flatten them slightly with the back of the spoon. Don't overcrowd the pan.
6. Fry for 3-4 minutes per side, until golden brown, crispy, and cooked through.
7. Use a slotted spoon to transfer the cooked fritters to a plate lined with paper towels to drain excess oil.
8. Repeat with the remaining batter, adding more oil to the skillet if necessary.
9. Serve warm with your favorite dipping sauce.
