Creamy Cajun Chicken Pasta
Ingredients:
8 ounces penne pasta
2 boneless, skinless chicken breasts, thinly sliced
2 tablespoons Cajun seasoning
2 tablespoons olive oil
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 small onion, thinly sliced
3 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese
Fresh parsley, for garnish
Directions:
Cook the penne pasta according to package instructions until al dente. Drain and set aside.
Season the thinly sliced chicken breasts with Cajun seasoning, ensuring they are evenly coated.
Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken slices and cook for 5-6 minutes per side, or until cooked through and no longer pink in the center. Remove from the skillet and set aside.
In the same skillet, add the sliced red and green bell peppers, onion, and minced garlic. Sauté for 3-4 minutes, or until the vegetables are tender.
Pour in the chicken broth and bring to a simmer. Allow the broth to reduce slightly.
Stir in the heavy cream, salt, and black pepper. Cook for another 2-3 minutes, stirring occasionally, until the sauce thickens.
Add the cooked penne pasta and cooked chicken slices to the skillet, tossing until everything is well coated in the creamy Cajun sauce.
Sprinkle grated Parmesan cheese over the pasta and stir to combine.
Remove from heat and garnish with fresh parsley before serving.
