The Greatest Queso That Ever Lived
Ingredients:
16 ounces (450g) cream cheese, softened
16 ounces (450g) Mexican cheese blend (a mix of cheddar, Monterey Jack, and pepper jack is ideal), shredded
1 cup (240ml) milk
1/2 cup (120ml) heavy cream
1/4 cup (30g) chopped pickled jalapeños, plus extra for garnish (optional)
2 tablespoons (15g) finely chopped green onions, plus extra for garnish (optional)
1 tablespoon (15ml) lime juice
1 teaspoon (5g) chili powder
1/2 teaspoon (3g) cumin
1/4 teaspoon (1g) cayenne pepper (optional, for extra heat)
Salt and freshly ground black pepper, to taste
Tortilla chips, for serving
Instructions:
1. In a large saucepan over medium-low heat, combine the softened cream cheese, milk, and heavy cream. Stir frequently until the cream cheese is completely melted and the mixture is smooth. This will take about 5-7 minutes, ensuring you stir consistently to prevent burning.
2. Reduce the heat to low. Add the shredded Mexican cheese blend, stirring constantly until it is fully melted and the queso is smooth and creamy. This process usually takes about 3-5 minutes. Be patient and continue stirring.
3. Stir in the chopped pickled jalapeños (if using), green onions (if using), lime juice, chili powder, cumin, and cayenne pepper (if using). Season generously with salt and freshly ground black pepper, to taste. Taste and adjust seasonings as needed – you might want more lime juice, spice, or salt.
4. Continue to cook for another 2-3 minutes, stirring frequently, to allow the flavors to meld together. Do not let the queso boil.
