Ingredients

For the Cupcakes:
1 ½ cups (190g) all-purpose flour

1 ½ tsp baking powder

¼ tsp salt

½ cup (115g) unsalted butter, softened

¾ cup (150g) granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup (120ml) milk

For the Filling:

½ cup white chocolate or vanilla pudding

3-4 drops pink and blue food coloring

¼ cup sprinkles or candy-coated chocolates

For the Frosting:

1 cup (230g) unsalted butter, softened

3 cups (360g) powdered sugar

2 tbsp heavy cream or milk

1 tsp vanilla extract

Pinch of salt

Sprinkles and candy-coated chocolates for decoration

Instructions

1. Bake the Cupcakes
Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.

In a bowl, whisk together flour, baking powder, and salt.

In a separate large bowl, beat butter and sugar until light and fluffy (about 2 minutes).

Add eggs one at a time, mixing well after each. Stir in vanilla extract.

Add half of the dry ingredients, then half of the milk, mixing gently. Repeat until combined.

Divide batter evenly into cupcake liners, filling each about ¾ full.

Bake for 18-20 minutes or until a toothpick inserted comes out clean.

Cool completely before filling and decorating.

2. Prepare the Piñata Filling
Divide the pudding into two small bowls. Tint one with pink food coloring and the other with blue.

Stir to combine, then set aside.

3. Hollow and Fill
Use a small knife or cupcake corer to remove the center of each cupcake (about halfway down).

Fill the cavity with alternating pink and blue pudding and a few candy-coated chocolates.

Place the removed cupcake pieces back on top to seal.

4. Make the Buttercream Frosting
Beat butter until creamy. Gradually add powdered sugar, one cup at a time.

Mix in vanilla, salt, and heavy cream. Beat for 2-3 minutes until smooth and fluffy.

Transfer to a piping bag fitted with a star tip.

5. Decorate
Pipe frosting onto each cupcake in a swirl pattern.

Decorate with sprinkles and more candy-coated chocolates.
