Festive Trinidad Coconut Sweet Bread

Ingredients:
- 3 cups all-purpose flour
- 1 cup sugar
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp salt
- 1/2 cup butter
- 1 cup shredded coconut
- 1/4 cup raisins or dried cherries
- 1 tsp vanilla extract
- 1 cup coconut milk
- 1 egg, lightly beaten
Instructions:
1. Preheat oven to 350°F. Grease a loaf pan.
2. Whisk flour, sugar, baking powder, cinnamon, nutmeg, and salt.
3. Cut in butter until mixture is crumbly.
4. Add coconut and dried fruit.
5. Mix wet ingredients, then combine with dry.
6. Bake for 60 minutes. Let cool before slicing.
