A refreshing twist on cheesecake! Packed with tropical fruits, creamy layers, and a buttery crust, this no-bake delight is perfect for any occasion!
Ingredients:
Crust:
1 1/2 cups vanilla wafer crumbs
2 tbsp melted butter
Filling:
1 (20 oz) can crushed pineapple, drained
3/4 cup granulated sugar
1/2 cup cold water
2 envelopes unflavored gelatin
1 (8 oz) package cream cheese, cubed
1 1/2 cups halved seedless grapes
1 (11 oz) can mandarin oranges, drained and halved
1 (10 oz) jar maraschino cherries, drained and chopped
1/2 cup finely chopped pecans
2 cups whipped topping
Instructions:
Crust: Mix wafer crumbs with melted butter and press into a 9-inch springform pan.
Filling: Heat pineapple with sugar, dissolve gelatin in cold water, and add to pineapple. Mix in cream cheese until smooth. Cool, then add fruits, nuts, and fold in whipped topping.
Assemble & Chill: Pour filling over crust, refrigerate overnight.
Serve: Remove from pan, slice, and serve chilled.
