Ravioli in Creamy Sauce with Diced Tomatoes and Chili Oil
Ingredients:
For the Ravioli:
1 package of fresh or frozen ravioli (cheese or mushroom filling works well)
For the Creamy Sauce:
2 tbsp unsalted butter
2 tbsp olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 cup heavy cream
1/2 cup vegetable or chicken broth
1/4 tsp dried basil
Salt and pepper, to taste
1/2 cup diced tomatoes (fresh or canned)
For the Garnish:
Fresh herbs like parsley or chives, finely chopped
A sprig of fresh thyme
Red-orange chili oil or tomato-based sauce (store-bought or homemade)
Instructions:
Cook the Ravioli:
Bring a large pot of salted water to a boil. Add the ravioli and cook according to the package instructions, usually around 4-6 minutes for fresh ravioli. Drain and set aside, reserving some pasta water for later.
Make the Creamy Sauce:
In a large skillet, heat the butter and olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until soft and translucent.
Add the minced garlic and cook for an additional minute until fragrant.
Stir in the heavy cream and vegetable broth. Let the sauce simmer for 5-7 minutes, until it thickens slightly.
Add the diced tomatoes, basil, salt, and pepper. Continue to simmer for another 2-3 minutes, allowing the flavors to combine.
Combine the Ravioli and Sauce:
Add the cooked ravioli to the skillet with the creamy sauce, gently stirring to coat the pasta. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
Plate the Dish:
Place the ravioli into a white bowl. Drizzle with the creamy tomato sauce and allow some sauce to pool at the bottom of the bowl.
Garnish with finely chopped herbs like parsley or chives and place a sprig of thyme on top.
Drizzle with a little red-orange chili oil or tomato-based sauce for an extra burst of flavor and color.
Serve:
The dish is now ready to serve! The creamy sauce, tangy tomatoes, and aromatic chili oil create a vibrant, comforting meal perfect for a cozy dinner.
This recipe captures the essence of a rich, flavorful meal with a creamy sauce, fresh herbs, and the tangy heat of chili oil, making it a delicious and satisfying dish. Enjoy!
