Strawberry tiramisu!

Ingredients (for 8 portions)
500 g of strawberries
70 g of sugar
3 tablespoons of lemon juice
3 egg yolks (gr. M)
1 pinch of salt
500 g of mascarpone
250 g of food curd (20% fat)
200 g of cream
200 g spoon biscuits
some baked cocoa to sprinkle
Some strawberries to garnish

PREPARATION
1st step
Wash the strawberries, pat dry. Puree half of the strawberries with 20g sugar and lemon juice. Cut the remaining strawberries into small cubes. Beat the egg yolk with the remaining sugar and salt at least 2 minutes. Briefly stir the mascarpone and the curd with a whisk. Carefully fold in the egg yolk mixture. Beat the cream until stiff and finally stir under the cream.

2nd step
Cover the bottom of the baking dish (20 x 25 cm) with spoon biscuits. Spread half of the strawberry puree on top. Place half of the mascarpone cream on top. Sprinkle with half of the strawberry cubes and smooth out. Spread the remaining spoon biscuits on top, press down slightly. Put the rest of the strawberry puree and the remaining strawberry cubes on top. Put the remaining cream on top and smooth out.

3. Step
Draw waves in the cream with a bakery comb or a fork. About 1 hour cooling points. Shortly before serving, dust with cocoa powder and garnish with strawberries as you like.
