Creamy Cajun Chicken bites and Fettuccine Alfredo

Ingredients:

1½ lbs boneless, skinless chicken breasts, cut into bite-sized chunks
2 tbsp olive oil
1 tbsp Cajun seasoning
1 tsp garlic powder
½ tsp smoked paprika
½ tsp onion powder
Salt and black pepper, to taste
3 tbsp unsalted butter
4 cloves garlic, minced

For the Fettuccine Alfredo:

12 oz fettuccine pasta
2 tbsp butter
1½ cups heavy cream
4 oz cream cheese, softened
1 cup grated Parmesan cheese
¾ cup shredded mozzarella cheese
1 tsp garlic powder
Salt and pepper, to taste
2 tbsp chopped parsley (for garnish)

Directions:

1. Cook the Fettuccine:
Boil fettuccine in salted water until al dente. Drain and set aside, reserving ½ cup pasta water.

2. Sear the Cajun Chicken Bites:
Toss chicken pieces with Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper.
In a large skillet, heat olive oil over medium-high heat. Sear the chicken for 5–6 minutes, flipping to brown all sides.
Add butter and minced garlic, toss to coat, then remove from heat and set aside.

3. Make the Alfredo Sauce:
In a clean skillet, melt butter over medium heat. Stir in cream cheese until smooth.
Slowly pour in heavy cream while whisking. Add Parmesan, mozzarella, garlic powder, salt, and pepper. Stir until cheese is melted and sauce is thick and velvety.
Use a bit of reserved pasta water to thin if needed.

4. Toss cooked fettuccine in the Alfredo sauce until coated. Plate and top with warm Cajun chicken bites.
5. Sprinkle with chopped parsley and extra Parmesan for a finishing touch.
