Creamy Spicy Cajun Chicken Bowtie Alfredo
Ingredients:
2 boneless, skinless chicken breasts, cut into strips
12 oz bowtie pasta
2 tablespoons olive oil
2 tablespoons Cajun seasoning
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper (optional for extra heat)
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
1. Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the chicken strips and season with Cajun seasoning, smoked paprika, garlic powder, onion powder, and cayenne pepper (if using). Cook until the chicken is golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
2. Cook the Pasta: While the chicken is cooking, prepare the bowtie pasta according to the package directions. Drain and set aside, reserving about 1 cup of pasta water.
3. Make the Alfredo Sauce: In the same skillet, add a little more oil if needed and sauté the minced garlic until fragrant, about 1 minute. Pour in the chicken broth and bring to a simmer for 2-3 minutes. Add the heavy cream and bring it back to a gentle simmer.
4. Create the Creamy Base: Stir in the grated Parmesan and shredded mozzarella cheese, allowing the cheeses to melt into the sauce, creating a smooth and creamy texture. Season with salt and pepper to taste.
5. Combine the Pasta, Chicken, and Sauce: Add the cooked bowtie pasta and Cajun chicken back into the skillet, tossing to coat everything in the creamy sauce. If needed, add some reserved pasta water to adjust the sauce consistency.
6. Serve: Garnish with fresh parsley and extra Parmesan cheese. Serve immediately and enjoy the spicy, creamy goodness!
