Steak Skewers
Ingredients (Serves 4-6)For the marinade:
1/4 cup soy sauce
1/4 cup olive oil
2 tbsp Worcestershire sauce
2 tbsp balsamic vinegar
3 garlic cloves, minced
1 tbsp Dijon mustard
1 tsp smoked paprika
1/2 tsp black pepper
1/2 tsp salt
For the skewers:
1.5 lbs (680g) sirloin or ribeye steak, cut into 1.5-inch cubes
1 red bell pepper, cut into 1.5-inch pieces
1 green bell pepper, cut into 1.5-inch pieces
1 red onion, cut into 1.5-inch pieces
8-10 wooden or metal skewers (if using wooden, soak in water for 30 minutes)
For garnish:
2 tbsp fresh parsley or thyme, chopped
1 tbsp minced garlic (for brushing, optional)
Instructions
Marinate the steak:
In a large bowl, whisk together soy sauce, olive oil, Worcestershire sauce, balsamic vinegar, minced garlic, Dijon mustard, smoked paprika, black pepper, and salt.
Add the steak cubes to the marinade, tossing to coat. Cover and refrigerate for at least 1 hour, or up to 4 hours for best flavor.
Assemble the skewers:
Preheat your grill to medium-high heat (about 400°F/200°C).
Thread the marinated steak cubes, bell peppers, and onion pieces onto the skewers, alternating between meat and vegetables.
Grill the skewers:
Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, until the steak reaches your desired doneness (135°F/57°C for medium-rare, 140°F/60°C for medium). Brush with minced garlic mixed with a bit of olive oil during the last 2 minutes of grilling for extra flavor, if desired.
Serve:
Remove the skewers from the grill and let them rest for 3-5 minutes.
Garnish with chopped fresh parsley or thyme.
Serve hot with optional sides like grilled corn, a green salad, or roasted potatoes.
Notes
For a spicier kick, add 1/2 tsp of red pepper flakes to the marinade.
You can also cook these skewers in the oven at 425°F (220°C) for 12-15 minutes, turning halfway, if a grill isn’t available.
