Grilled Chicken Avocado Salad
Ingredients
For the Chicken:
• 2 chicken breasts
• 1 tbsp olive oil
• 1 tsp garlic powder
• ½ tsp paprika
• ½ tsp salt
• ½ tsp black pepper
• 1 tsp lemon juice
For the Salad:
• 1 large avocado, diced
• 1 cup cherry tomatoes, halved
• ¼ cup fresh cilantro, chopped
• 1 cup lettuce or mixed greens (optional)
For the Dressing:
• 2 tbsp olive oil
• 1 tbsp fresh lime juice
• 1 tsp honey
• ½ tsp Dijon mustard
• Salt & pepper, to taste
Instructions
1️⃣ Marinate & Grill the Chicken:
• Rub the chicken breasts with olive oil, garlic powder, paprika, salt, pepper, and lemon juice.
• Grill or pan-cook over medium heat for 6–7 minutes per side until golden brown and cooked through.
• Let rest for 5 minutes, then slice.
2️⃣ Prepare the Salad:
• In a large bowl, combine diced avocado, cherry tomatoes, chopped cilantro, and greens (if using).
3️⃣ Make the Dressing:
• In a small bowl, whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper.
4️⃣ Assemble & Serve:
• Add sliced chicken to the salad.
• Drizzle with the dressing and toss gently.
• Serve immediately for the freshest flavor.
