GRANDMA’S APRICOT CHICKEN
8 chicken thighs, bone in and skin on
1 Tbsp. cooking oil
salt and pepper

Apricot Sauce
1 cup apricot preserves
1 cup French dressing or Russian Dressing
one 1oz package dry onion soup mix

garnish
1 small can apricot halves, drained
Fresh herbs
Sprinkle of red pepper flakes (optional)

Preheat your oven to 350
Season the chicken with salt and pepper on both sides.
Heat the oil in the skillet.
Fry the chicken in the oil until all sides are browned, and skin is crispy.
Mix together the sauce ingredients.
Brush half of the sauce over top of the chicken in the baking dish reserving some for later. Bake for 30 minutes.
Pour the remaining mixture on top of the chicken thighs, along with apricot halves. Continue to cook for another 10 minutes
Remove and serve with some sauce drizzled over top of the chicken. Top with fresh herbs
