🇮🇹 Polpette di Melanzane (Eggplant Meatballs) 🍆🧀A delicious vegetarian twist on classic meatballs with crispy breadcrumbs and rich Parmesan flavor!
Ingredients:
• 1 large eggplant
• 1/2 cup breadcrumbs
• 1/4 cup Parmesan cheese
• 1 egg
• 2 cloves garlic, minced
• 2 tbsp olive oil
• 1 tbsp chopped parsley
• Salt & pepper to taste
Instructions:
1️⃣ Roast or sauté the eggplant until soft, then mash.
2️⃣ Mix eggplant with breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper.
3️⃣ Form into small balls and roll in extra breadcrumbs.
4️⃣ Heat olive oil in a pan and fry until golden brown.
5️⃣ Serve warm with marinara sauce!
