🥙 mediterranean delight: greek chicken gyros with cucumber tzatziki 🥒✨
Ingredients:
For the chicken marinade:
1 1/2 lbs boneless, skinless chicken thighs or breasts
3 tablespoons olive oil
Juice of 1 lemon
3 garlic cloves, minced
2 teaspoons dried oregano
1 teaspoon ground cumin
1 teaspoon paprika
Salt and black pepper to taste
For the cucumber tzatziki:
1 cup plain Greek yogurt
1 small cucumber, grated and squeezed to remove excess water
2 garlic cloves, minced
1 tablespoon olive oil
1 tablespoon fresh dill, chopped
Juice of 1/2 lemon
Salt and black pepper to taste
For the gyros assembly:
4-6 pita bread rounds
1 small red onion, thinly sliced
1 cup cherry tomatoes, halved
1/2 cup crumbled feta cheese
Fresh lettuce leaves
Directions:
1️⃣ Marinate the chicken: In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, cumin, paprika, salt, and pepper. Add the chicken and toss to coat. Cover and marinate in the refrigerator for at least 1 hour or overnight for best flavor.
2️⃣ Prepare the tzatziki: In a medium bowl, mix the Greek yogurt, grated cucumber, minced garlic, olive oil, dill, lemon juice, salt, and pepper. Chill in the refrigerator until ready to serve.
3️⃣ Cook the chicken: Heat a large skillet or grill pan over medium-high heat. Cook the marinated chicken for 4-5 minutes on each side, or until fully cooked and slightly charred. Remove from heat and let rest for a few minutes before slicing into strips.
4️⃣ Warm the pita: Lightly warm the pita bread on a dry skillet or in the oven for a few minutes.
5️⃣ Assemble the gyros: Spread a generous layer of cucumber tzatziki on each pita. Add sliced chicken, red onions, cherry tomatoes, feta cheese, and lettuce. Fold the pita into a wrap or serve open-faced.
6️⃣ Serve and enjoy: Serve the gyros immediately with extra tzatziki on the side.
