Cabbage Soup
Ingredients:
2 tablespoons olive oil
1 onion, diced
3 carrots, sliced
3 celery stalks, sliced
3 cloves garlic, minced
1/2 head of cabbage, chopped
6 cups vegetable broth or chicken broth
Directions:
In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté until the vegetables are softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute. Add the chopped cabbage and broth to the pot. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until the cabbage is tender. Season with salt and pepper to taste, and serve hot.
