Ingredients:
- 8 oz cream cheese, softened
- 1/2 cup pumpkin puree
- 1 cup graham cracker crumbs (plus more for rolling)
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon ground cinnamon
- 1/4 cup melted butter
- Cinnamon sugar for coating
Directions:
1. In a large bowl, beat the softened cream cheese until smooth and creamy.
2. Add pumpkin puree, powdered sugar, vanilla extract, pumpkin pie spice, and ground cinnamon. Mix until well combined.
3. Stir in the melted butter and graham cracker crumbs. Mix until the mixture holds together and is easy to shape.
4. Using your hands or a small cookie scoop, form the mixture into 1-inch balls.
5. Roll each ball in additional graham cracker crumbs, then coat with cinnamon sugar.
6. Place the coated balls on a baking sheet lined with parchment paper.
7. Refrigerate for at least 1 hour to firm up before serving.
