Crockpot Loaded Steak and Potato Bake
Ingredients:
1½ lbs sirloin steak, cut into bite-sized cubes
4–5 medium Russet potatoes, diced
1 medium onion, chopped
3 cloves garlic, minced
1½ cups shredded cheddar cheese
1/2 cup cooked and crumbled bacon
1 teaspoon smoked paprika
1 teaspoon dried thyme
1/2 cup sour cream (for serving)
1/4 cup chopped green onions (for garnish)
1/2 cup beef broth
2 tablespoons olive oil
Salt and pepper to taste
Optional: jalapeño slices for heat
Directions:
Heat olive oil in a skillet over medium-high heat. Sear steak cubes for 2–3 minutes until browned. Season with salt, pepper, and paprika.
Add steak, diced potatoes, chopped onion, garlic, and thyme to the crockpot. Pour in beef broth and stir gently to combine.
Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until potatoes are tender and steak is cooked through.
About 20 minutes before serving, sprinkle shredded cheddar and crumbled bacon over the top. Cover again until cheese melts.
Serve warm with a dollop of sour cream, green onions, and jalapeños if desired.
