🇮🇹 Tortelli di Zucca (Pumpkin-Filled Pasta)
Sweet and savory pumpkin-stuffed pasta served with butter and sage.
Ingredients:
• 300 g fresh pasta sheets
• 300 g pumpkin purée
• 50 g amaretti cookies, crushed
• 50 g grated Parmesan
• 1 egg
• Nutmeg, salt, pepper
• 50 g butter
• Fresh sage leaves
Instructions:
1. Mix pumpkin, amaretti, Parmesan, egg, nutmeg, salt, and pepper.
2. Cut pasta into squares, fill with pumpkin mixture, and seal into tortelli.
3. Boil in salted water until they float.
4. Melt butter with sage in a pan.
5. Toss cooked tortelli in sage butter and serve.
