1/4 cup (60ml) water π§

Directions:
1. Letβs kick things off by preheating your oven to 350Β°F (175Β°C). Grab a 10x15-inch jelly roll pan and line it with parchment paper for easy cleanup. In a bowl, sift together the flour, cocoa powder, baking powder, and salt.
2. In another bowl, beat the egg yolks with half of the granulated sugar until itβs thick and has that lovely pale color. Stir in the vanilla extract and milk. Over in a separate bowl, beat the egg whites until soft peaks form, then gradually add in the remaining sugar until you hit those stiff peaks!
3. Now, fold that dry mix into the yolk mixture, and gently fold in the egg whites in thirds. Once everything is combined, spread the batter evenly in your prepared pan and pop it in the oven for about 10-12 minutes.
4. Time to roll! When the cake is done, flip it onto a clean towel dusted with powdered sugar. Carefully peel off the parchment and roll it up with the towel. Let it cool completely while you move on to the next step.
5. For that delicious cherry filling, combine your cherries, sugar, cornstarch, and water in a saucepan. Cook it over medium heat while stirring until the mixture thickens. If you're using kirsch for that authentic twist, stir it in and let it cool.
