My previous post about making a soup out of potato peels was deleted due to some people leaving inappropriate comments, but I was invited to post the recipe with the pic again. So here it goes.
This is a recipe from Germany's "bad time" when food was scarce throughout the county, and people had to be very creative to make meals with whatever ingredients they had. (Just a bit of background about where this recipe comes from.)
For this soup, cut an onion and brown it in grease (oil, butter, etc.). Add the potato peels and whatever vegetables you have. This is a good opportunity to use those parts of veggies that we typically throw away (carrot peels, the parts of cauliflower that we usually discard, etc.). I had a bag of radishes that had to be used up and some left-over parsley. Add fluid. I used water with 3 teaspoons of bouillon mix. Bring it to a boil until all the ingredients are soft. Tear up a slice of old bread to thicken the soup. Add whatever spices you want (I used salt, pepper, and Maggi), then puree everything. Finally, I added some sour cream that I wanted to use up. The recipe does not call for it, but I have so much sour cream right now that I need to find creative ways to use it.
Don't buy any ingredients to make this soup. This soup is about using whatever you have, especially those parts of vegetables that we usually discard. Make something out of nothing. It turned out to be a tasty soup.
