🥒 Southern Squash Casserole
Ingredients:
4 cups yellow squash, sliced
1/2 cup chopped onion
1 tbsp butter
1/2 cup sour cream
1/2 cup mayonnaise
1 cup shredded cheddar cheese
1/2 tsp salt
1/4 tsp black pepper
2 eggs, beaten
1 cup crushed buttery crackers (like Ritz), divided
2 tbsp melted butter (for topping)
Instructions:
1️⃣ Preheat Oven:
Preheat oven to 350°F (175°C). Grease a 9x9-inch baking dish.
2️⃣ Cook Squash and Onion:
In a large skillet, melt butter over medium heat. Add squash and onion. Cook until tender, about 10–12 minutes. Drain any excess liquid.
3️⃣ Mix Filling:
In a large bowl, combine sour cream, mayonnaise, cheddar cheese, salt, pepper, and eggs. Stir in cooked squash and onion. Fold in 1/2 cup of crushed crackers.
4️⃣ Assemble Casserole:
Pour mixture into prepared baking dish. Top with remaining 1/2 cup crushed crackers. Drizzle with melted butter.
5️⃣ Bake:
Bake for 30–35 minutes or until the top is golden brown and bubbly.
6️⃣ Cool and Serve:
Let sit for 5 minutes before serving.
