Delicious Fresh Peach Fritters
Ingredients:
2 cups fresh peaches, peeled and diced
1 tablespoon lemon juice
1 cup all-purpose flour
1/4 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
2 large eggs
1/3 cup milk
1 teaspoon vanilla extract
2 tablespoons unsalted butter, melted
Vegetable oil, for frying
For the Glaze:
1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
Directions:
Prepare the Peaches: Place the diced peaches in a bowl and sprinkle with lemon juice. Gently stir to coat and set aside.
Make the Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon. In a separate bowl, whisk the eggs, milk, vanilla extract, and melted butter. Add the wet ingredients to the dry ingredients and stir until just combined.
Fold in Peaches: Gently fold the prepared peaches into the batter, being careful not to overmix.
Heat the Oil: In a deep skillet or heavy-bottomed pot, heat about 2 inches of vegetable oil over medium heat to 350°F (175°C).
Fry the Fritters: Drop heaping tablespoons of batter into the hot oil, a few at a time. Do not overcrowd the pan. Fry for 2–3 minutes per side, or until golden brown and cooked through. Use a slotted spoon to remove fritters and drain on a paper towel-lined plate.
Make the Glaze: In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
Glaze the Fritters: While the fritters are still warm, drizzle or dip them in the glaze. Let set for a few minutes before serving.
