Ingredients:
4 large eggs, separated
1 1/4 cups granulated sugar
1 tablespoon lemon zest
1 cup whole milk
1/4 cup fresh lemon juice
1/4 cup all-purpose flour
Pinch of salt
Powdered sugar, for dusting
Directions:
Preheat your oven to 350°F (175°C) and lightly grease a 9-inch round cake pan.
In a mixing bowl, whisk the egg yolks and sugar until pale and thick.
Add the lemon zest, lemon juice, and flour to the mixture. Stir until smooth.
Slowly pour in the milk while continuing to stir. Add a pinch of salt and mix well.
In another bowl, beat the egg whites until soft peaks form, then gently fold them into the yolk mixture.
Pour the batter into the prepared cake pan and bake for 40-45 minutes, or until the cake is set and golden brown on top.
Let the cake cool completely before dusting with powdered sugar and serving.
