Ingredients:
1 cup unsalted butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup pecans, chopped
1/2 teaspoon ground cinnamon (optional)
Directions:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add the egg and vanilla extract, mixing until smooth.
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using). Gradually mix into the wet ingredients until just combined.
Fold in the chopped pecans.
Scoop tablespoon-sized portions of dough and place on the baking sheet about 2 inches apart.
Bake for 10–12 minutes, or until the edges are lightly golden and the centers are set.
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
