Spiced Chickpea Lentil Patties: Easy, Healthy & Delicious Bites 🌱πŸ’ͺπŸ”₯

ingredients:
1 can (15 oz / 425g) chickpeas, rinsed and drained
Β½ cup (100g) cooked brown or green lentils (canned or cooked from dry)
Β½ cup (50g) rolled oats or breadcrumbs
1 small onion, finely chopped
2 cloves garlic, minced
1 tbsp curry powder
Β½ tsp ground cumin
Β½ tsp ground coriander
ΒΌ tsp turmeric powder
ΒΌ tsp cayenne pepper (optional, for heat)
Salt and freshly ground black pepper to taste
2 tbsp chopped fresh cilantro or parsley
1 tbsp olive oil or vegetable oil (for cooking, optional if baking)

directions:
1. Preheat oven to 400Β°F (200Β°C) if baking. Line a baking sheet with parchment paper. If pan-frying, have a skillet ready.
2. In a large bowl, mash the chickpeas and cooked lentils together using a potato masher or fork until mostly broken down but still slightly chunky for texture.
3. Add the finely chopped onion, minced garlic, rolled oats (or breadcrumbs), curry powder, cumin, coriander, turmeric, cayenne pepper (if using), salt, pepper, and chopped cilantro/parsley to the bowl.
4. Mix everything together thoroughly until well combined. The mixture should hold together when pressed. If it seems too wet, add a little more oats/breadcrumbs; if too dry, add a splash of water or olive oil.
5. Form the mixture into 4-6 patties of equal size (depending on desired thickness).
6. To Bake: Place the patties on the prepared baking sheet. You can lightly brush the tops with olive oil if desired. Bake for 15 minutes, then carefully flip the patties and bake for another 10-15 minutes, or until golden brown and firm.
7. To Pan-Fry: Heat 1 tbsp of olive oil in a skillet over medium heat. Carefully place the patties in the skillet (do not overcrowd). Cook for 4-5 minutes per side, until golden brown and heated through.
8. Serve hot on burger buns with your favorite toppings, in a wrap, or alongside a salad.
