Flexible Flax & Almond Flour Superfood Tortilla Wraps Recipe ✨🌿🌯

Ingredients
1 cup (112g) almond flour, finely ground
1/4 cup (30g) tapioca starch or arrowroot powder
1/4 cup (30g) ground flaxseed (flax meal)
1/2 tsp salt
1/2 tsp baking powder (optional, for slight puffiness)
1 cup (240ml) warm water (you might need slightly more or less)
1 tbsp (15ml) olive oil or melted coconut oil (optional, for pliability)

Directions
1. In a medium bowl, whisk together the almond flour, tapioca starch, ground flaxseed, salt, and baking powder (if using).
2. Add the olive oil (if using) and about 3/4 cup (180ml) of the warm water. Stir with a spoon or spatula until a shaggy dough forms.
3. Gradually add more warm water, one tablespoon at a time, mixing after each addition, until the dough comes together into a soft, slightly sticky ball. It should not be overly wet. The flax meal will absorb water as it sits.
4. Let the dough rest for 5-10 minutes to allow the flax to hydrate.
5. Divide the dough into 4-6 equal portions (depending on desired wrap size) and roll each portion into a ball.
6. Place one dough ball between two sheets of parchment paper. Use a rolling pin to roll it out into a thin circle (about 6-8 inches / 15-20 cm in diameter). Carefully peel off the top parchment paper.
7. Heat a non-stick skillet or crepe pan over medium heat (no oil needed unless your pan tends to stick).
8. Carefully flip the rolled-out wrap onto the preheated skillet (peel off the bottom parchment paper).
9. Cook for 1-2 minutes per side, or until the wrap looks dry, slightly opaque, and may have a few light golden spots. Be careful not to overcook, or it will become brittle. It should remain pliable.
10. Transfer the cooked wrap to a plate and cover with a clean kitchen towel to keep it warm and soft while you cook the remaining wraps.
11. Repeat the rolling and cooking process for the remaining dough balls.
12. Use the wraps immediately with your favorite fillings, or let them cool completely and store in an airtight bag or container at room temperature for 1-2 days, or refrigerated for longer. Reheat briefly before use if needed.
