Tartiflette-Loaded Baked Potato Plate 🥔🧀
Ingredients:
• For the Crispy Roasted Potatoes:
• 4 large russet potatoes, halved
• 2 tbsp olive oil
• Salt & pepper, to taste
• For the Tartiflette Topping:
• 4 oz turkey bacon, chopped
• 1 cup reblochon cheese (or substitute with creamy brie or camembert), cubed
• 1/2 cup heavy cream
• 1 tbsp fresh thyme, chopped
• 1 small onion, thinly sliced
• 2 tbsp butter
• 1 tbsp olive oil
• For the Garlic Herb Butter:
• 3 tbsp unsalted butter
• 2 cloves garlic, minced
• 1 tbsp fresh parsley, chopped
• Salt & pepper, to taste
Instructions:
1. Roast the Potatoes:
• Preheat your oven to 400°F (200°C).
• Place the potato halves on a baking sheet and drizzle with olive oil. Season with salt and pepper.
• Roast for 30-35 minutes until the potatoes are crispy and golden brown on the outside and soft inside.
2. Caramelize the Onions:
• While the potatoes are roasting, heat olive oil and 1 tbsp butter in a skillet over medium heat.
• Add the thinly sliced onion and cook, stirring occasionally, for 12-15 minutes, until soft and golden brown. Remove from heat and set aside.
3. Prepare the Tartiflette Topping:
• In the same skillet, add the chopped turkey bacon and cook over medium heat for 5-7 minutes until crispy. Remove from the skillet and set aside with the caramelized onions.
• In a small saucepan, heat the heavy cream over medium heat until warm. Stir in the cubed reblochon cheese and let it melt, creating a creamy sauce. Add the fresh thyme and stir until well combined. Season with salt and pepper to taste.
4. Make the Garlic Herb Butter:
• In a small pan, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Stir in fresh parsley and season with salt and pepper.
5. Assemble the Loaded Potatoes:
• Once the potatoes are roasted, remove them from the oven and spoon out a bit of the flesh to create space for the toppings.
• Fill the potatoes with the caramelized onions, crispy turkey bacon, and a generous amount of the melted reblochon cheese sauce.
• Drizzle the garlic herb butter over the loaded potatoes.
6. Serve:
• Garnish with additional fresh thyme and serve hot!
