Lemon Garlic Butter Chicken with Roasted Broccoli Penne
Zesty Lemon Chicken Penne with Roasted Broccoli
Ingredients:

8 ounces penne pasta
1 pound chicken breast, cubed
2 cups broccoli florets
2 tablespoons olive oil
3 tablespoons butter
3 cloves garlic, minced
1 lemon, zested and juiced
1 teaspoon Italian seasoning
1/2 teaspoon paprika
1/2 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
1/4 cup grated Parmesan cheese
Fresh parsley, chopped (for garnish)
Directions:

Preheat your oven to 400°F (200°C).
Toss broccoli florets with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 15-20 minutes until tender and slightly charred.
Cook penne pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the remaining olive oil and 1 tablespoon of butter over medium heat. Add the cubed chicken, Italian seasoning, paprika, salt, and pepper. Sauté until the chicken is cooked through and golden, about 6-8 minutes.
Push the chicken to one side of the skillet. Add the remaining butter, minced garlic, lemon zest, and lemon juice. Sauté for 1-2 minutes until fragrant.
Toss in the cooked penne, roasted broccoli, and grated Parmesan cheese. Stir well to coat everything in the zesty lemon garlic butter sauce.
Garnish with fresh parsley and serve immediately.
