Roasted Sweet Potatoes

Ingredients:
Olive oil spray
4 medium sweet potatoes (about 7 oz each), peeled and cubed
4 teaspoons olive oil
1 teaspoon garlic powder
¾ teaspoon sweet paprika
¾ teaspoon dried rosemary (or Italian seasoning)
½ teaspoon kosher salt
Black pepper to taste
Instructions:
Preheat Oven & Prepare Pan: Preheat the oven to 425°F (220°C). Lightly spray a sheet pan with olive oil spray.
Cut Sweet Potatoes: Cut the peeled sweet potatoes into ¾-inch cubes.
Season Sweet Potatoes: In a large bowl, toss the sweet potato cubes with the olive oil, garlic powder, paprika, rosemary (or Italian seasoning), salt, and black pepper. Make sure the potatoes are evenly coated with the oil and spices.
Roast: Spread the sweet potato cubes in a single layer on the prepared sheet pan. Ensure they aren't overcrowded as this can cause them to steam instead of roast. Bake for 30-35 minutes, tossing every 10-15 minutes, until tender, golden brown, and slightly caramelized on the edges. Keep an eye on them after 25 minutes to prevent burning, as oven temperatures can vary.
Serve: Remove from the oven and serve hot.

Potato Substitutes: Yams or butternut squash can be substituted for sweet potatoes.
Seasoning Variations: Experiment with different seasonings to create various flavor profiles. You can add onion powder, cumin, chili powder, or make them smoky with smoked paprika. For a spicy kick, add ground cayenne pepper or chipotle pepper.
