Grilled Sausages with Peppers and Mashed Potatoes
Ingredients:
For the Sausages:
4 sausages (any type you prefer – Italian, bratwurst, or chorizo)
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper to taste
For the Peppers:
2 bell peppers (any color), sliced
1 red onion, sliced
2 tablespoons olive oil
1 teaspoon dried oregano
Salt and pepper to taste
For the Mashed Potatoes:
2 lbs potatoes (Yukon gold or russet), peeled and cubed
1/2 cup milk (warm)
4 tablespoons unsalted butter
Salt and pepper to taste
Directions:
Prepare the Mashed Potatoes: Place the peeled and cubed potatoes in a large pot and cover with water. Add salt and bring to a boil. Cook for 15-20 minutes or until fork-tender. Drain and mash the potatoes until smooth. Add the warm milk, butter, salt, and pepper, and mix until creamy. Set aside.
Grill the Sausages: Preheat your grill or grill pan to medium-high heat. Rub the sausages with olive oil and season with garlic powder, paprika, salt, and pepper. Grill the sausages for 7-10 minutes, turning occasionally, until fully cooked and slightly charred.
Sauté the Peppers and Onions: While the sausages are grilling, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced bell peppers and onion, season with oregano, salt, and pepper, and sauté for 8-10 minutes until tender and caramelized.
Assemble the Dish: Serve the grilled sausages alongside a generous portion of mashed potatoes, topped with the sautéed peppers and onions.
