Ingredients:

1 lb Italian sausage (mild or spicy)
1 lb rigatoni pasta
1/2 cup sundried tomatoes, chopped
2 cups fresh spinach
4 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 tablespoons olive oil
Salt and pepper to taste
Fresh basil (optional, for garnish)
Directions:

Cook the rigatoni pasta according to package directions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Remove sausage from casings and crumble it into the skillet. Cook until browned and cooked through, about 5-7 minutes.
Add the garlic to the sausage and cook for 1-2 minutes until fragrant.
Stir in the sundried tomatoes and spinach. Cook until the spinach wilts, about 2-3 minutes.
Add the heavy cream and Parmesan cheese. Stir until the cheese melts and the sauce thickens. Season with salt and pepper.
Add the cooked rigatoni to the skillet, tossing to coat the pasta in the sauce.
Serve hot, garnished with fresh basil if desired.
