Pineapple & White Chocolate Cheesecake 🍍
Ingredients:
For the crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/3 cup melted butter
For the filling:
2 packages (8 oz each) cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
1/2 cup crushed pineapple, well drained
1/2 cup white chocolate chips, melted and slightly cooled
For topping (optional):
Extra pineapple chunks
White chocolate shavings
Whipped cream
Directions:
Preheat oven to 325°F.
In a bowl, mix graham cracker crumbs, sugar, and melted butter until it looks like wet sand. Press mixture into the bottom of a 9-inch springform pan. Set aside.
In a large mixing bowl, beat the cream cheese until smooth. Add sugar and vanilla extract. Beat again until creamy.
Add eggs one at a time, mixing well after each.
Stir in the melted white chocolate until fully combined. Then gently fold in the crushed pineapple.
Pour the filling over the crust and smooth the top.
Bake for 50–55 minutes, or until the center is almost set. It should still jiggle a little in the center.
Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.
Remove from oven, let cool completely, then refrigerate for at least 4 hours or overnight.
Before serving, top with whipped cream, extra pineapple, and white chocolate shavings if desired.
