Sometimes we all need a little comfort food. Homemade chicken pot pie. Yum!
Edit: I never measure my seasoning so I’m estimating… “Southers don’t measure seasonings. We sprinkle and shake till the spirits of our ancestors whisper, “Stop my child” lol. However here is my recipe:
-3 16 oz bags of frozen veggies (I used pea, carrot, corn mix, extra bag of corn because we love corn, and cauliflower, broccoli mix.
-2 cans of cream of chicken soup
-1 1/2 cups of heavy whipping cream
-6 boneless skinless chicken breast
-1 store bought pastry dough
-Seasoning…3 tsp of garlic powder, 3 tsp of onion powder, 1 tsp of thyme, 2 tsp of everything but bagel seasoning, 1 tsp of salt, 2 tsp of pepper
Directions…I cut my chicken in cubes and sautéed with olive oil with 1 1/2 tsp of garlic powder, 1 1/2 tsp of onion powder, 1 tsp of salt, 1 tsp of pepper, 1 tsp of thyme and 1 tsp of everything but bagel seasoning. I then defrosted all my frozen veggies and mixed in with chicken. In another bowl I whisked together my cream of chicken soup with heavy whipping cream and a little more seasoning (rest of garlic powder, pepper, onion powder and everything but bagel seasoning). I then mixed soup mixture with veggies and chicken. I poured everything into a 13x9 casserole pan. I rolled out my dough to cover dish. I then cut into strips and weaved on top. Baked at 400 for 20 min.
